Even if you're not usually a fan of the Newton, these Fig Bars with Thyme just might help you learn to love the figgy cookie.

Instead of that dense, seedy filling that stuffs the Newton, these bars are topped with a delicate fig jam scented with lemon zest and thyme—you might just want to make a double batch and keep half on hand to serve with a cheese plate.

Though you probably won't be able to get fresh figs in your area this time of year, there's no need to worry. You can sub in a jar of fig jam and simmer to infuse it with thyme and lemon. Either way, these walnut crumble topped fig bars are a must-try, not matter how you feel about fig desserts.
