If you're wondering how to entice a bunch of guys to eat cupcakes, the answer is pretty simple: add bacon. David Arrick, founder of New York's Butch Bakery and author of The Butch Bakery Cookbook, found this out pretty quickly and used this formula to create these Driller Cupcakes, maple cupcakes topped with milk chocolate ganache and candied bacon.
Yes, pretty much everyone loves bacon. But beyond that, these little cakes are all about the magic combination of sweet and salty. The maple cupcakes are sweetly scented with vanilla and bake up with a moist, tender crumb, the ganache is almost more of a mousse than a frosting, and the candied bacon is baked with brown sugar and cracked black pepper giving it a sweet, smoky bite. When all of the elements come together, these cupcakes are pretty incredible—kind of like bacon swiped though maple syrup, but even better since there's chocolate ganache involved.
