As you may already know, Nick was once the Executive Pastry Chef at Windows on the World, but these days can be found directing the Institute of Culinary Education's baking program. Over the last two decades, he's been an insanely prolific cookbook author, publishing many cookbooks in the sweets department but this week the recipes are coming from The Modern Baker to celebrate the book's recent paperback release.
