As much as I love jam, I'm pretty enamored of breads that need no embellishment at all. Give me some herb speckled flat bread or olive covered focaccia or cinnamon swirled brioche and I'll call it a day. This is an example of bread that's perfect eaten out of hand. The yeasted dough starts out almost batter-like, which admittedly caused a few moments of panic when I feared I had inadvertently made a batch of brownies, but it bakes into a moist loaf with a chocolaty crumb. In fact, the texture is darn near perfect: soft and pillowy, yet easily sliced.
This is good any-time-of-day bread because it's intensely chocolaty without being overly sweet. (Instant espresso powder is the key to enhancing the chocolate flavor.) But since each slice has chunks of chocolate—I chose a bar of my favorite Green and Black's 75 percent cocoa—it's just indulgent enough to lure me out of bed.
