Wake and Bake: Irish Morning Bread
This bread looks about the way that I do in the morning: wrinkled, disheveled, and barely holding itself together. While I don't have many excuses, this bread has many. The dough is made from whole wheat flour, oats, and a heavy dose of raisins, all which give it a particularly lumpy appearance.
Yet those same ingredients are what gives this bread character. The raisins add pops of chewy sweetness and the mixture of oats and brown flour create a dense but moist crumb with a strong wheat flavor. Because I need sugar to help me begin my transformation into looking presentable, the top of the loaf is sprinkled with sugar, creating a sweet and crackly crust.
