We knew that, at some point this summer, we'd want a whole week of popsicle recipes. And for that week, we knew there was no one better than Fany Gerson.

Born in Mexico City, and trained both in Mexico and at the Culinary Institute of America, Gerson has spent time in such high-end kitchens as New York's Eleven Madison Park and Spain's Akelare, then developing Mexican desserts at Manhattan's Rosa Mexicano. Within the last year, she's not only made a name for herself in the city under the title "La Newyorkina," selling paletas (Mexican-style ice pops) at fairs and pop-ups all over New York; she's also released two books, Paletas: Authentic Recipes for Mexican Ice Pops, Shaved Ice & Aguas Frescas and My Sweet Mexico: Recipes for Authentic Pastries, Breads, Candies, Beverages, and Frozen Treats.

This week, she'll be sharing five recipes—some previously published, some developed just for you Serious Eaters. From avocado-chocolate to roasted apricot-vanilla, there's a paleta for every palate. Stay tuned all week for frozen treats!
