Cookie Monster: Orange Honey Cookies

I'm a dunker. I started young—Vienna Fingers plunked in a tall glass of milk—and continued as I aged, settling on my current habit of submerging biscotti, centimeter by centimeter, into a frothy cappuccino. So I'm in a bit of a dilemma come summer time, because dipping biscotti into an iced coffee just doesn't work the way I want it to. I need a soft cookie to accompany my morning caffeine, and preferably one that shares the mildly sweet flavor and pleasantly long shape of biscotti.
These cookies are the answer: they're soft and pillowy and a contemplative four inches long. The cookie has a mellow, earthy sweetness. There is just enough honey to sweeten the dough without overpowering the taste of orange. If you can, use orange blossom honey: it will add citrusy honeysuckle notes to the dough.
