Bake the Book: Chocolate Whoopie Pies with Banana Buttercream
For our second foray into the world of whoopies I was all set to share a classic chocolate cake-vanilla butter cream filled pie from Sarah Billingsley's and Amy Treadwell's Whoopie Pies. That was until I glanced over at the bananas sitting on my kitchen counter creeping into past-their-prime territory. Chocolate and banana in whoopie form? Yup, that sounded like an even tastier plan.
The Classic Chocolate Whoopies are everything that a great whoopie bookend should be, moist and cakey with lots of rich cocoa. The Banana Buttercream comes together just like any other buttercream, save for the fact that the mashed banana stands in for some of the butter. A bit of lime juice keeps the bananas from turning an unsightly shade of beige and adds a hint of acid that brightens the sugary banana flavor.
Just as awesome as that classic frozen dessert on a stick, these Chocolate Whoopie Pies with Banana Buttercream are a testament to the glorious combo of chocolate and banana.
