Introducing: Nick Malgieri Week
We're thrilled that on Serious Eats: Sweets, we'll have all sorts of guest writers chiming in—and even more thrilled that the first esteemed chef to join us is Nick Malgieri, one of the most respected, credentialed, all-around master bakers out there. Every day this week, he'll be stopping by the site to share a recipe he loves. Get ready for lemon-ginger bars, mini coconut cakes, and a whole lot more.
Once the Executive Pastry Chef at Windows on the World, these days Malgieri is the director of the Institute of Culinary Education's baking program; over the last two decades, he's been an insanely prolific cookbook author, when he's not guest teaching or appearing with Martha Stewart or Julia Child. His books include How to Bake (which won the James Beard Foundation's "Best Baking Book" award in 1995), Perfect Cakes, Chocolate, The Modern Baker, and his latest, Bake! Essential Techniques for Perfect Baking.
I've known Nick for at least 15 years, and he's one of those fonts of baking and pastry wisdom who's got more cred than anyone. When he talks about this stuff, you've got to pay attention. So we couldn't be happier he's sharing his expertise with you Serious Eaters.
